ORIGIN:

The vanilla offered here comes from Taha’a, the iconic vanilla island of French Polynesia. Nicknamed“Vanilla Island,” Taha’a benefits from exceptional soil, an ideal tropical climate, and artisanal expertise that has been recognized for several generations. It is here that some of the most prestigious Tahitian vanilla beans are grown, prized worldwide for their remarkable quality and their incomparably delicate aroma. Taha’a’s reputation extends far beyond the borders of Polynesia, and today the island is a true benchmark in the world of exceptional vanilla.

USES:

Tahitian vanilla beans are ideal for flavoring creams, crème brûlée, flans, ice cream, mousses, pastries, jams, compotes, rice pudding, hot chocolate, cocktails, flavored rums, and even certain savory dishes such as sauces served with fish, shellfish, or white meats.

To fully enjoy its aromas, split the pod lengthwise, then scrape out the precious seeds before incorporating them into your recipe. The pod can then be steeped whole to extract the full richness of its flavors.

STORAGE:

To preserve all the qualities of your Tahitian vanilla, we recommend storing the pods in an airtight glass jar, away from light, heat, and temperature fluctuations. Avoid the refrigerator, as it can cause them to dry out.

MISS MONOI TIP:

Simply pour a small amount of food-grade alcohol (white rum, vodka, or neutral alcohol) into your jar before placing the pods inside. This method, widely used in Polynesia, helps keep the vanilla supple and fragrant for very long periods. Some Polynesians preserve their finest beans this way for several years… although they’re usually so delicious that they’re used up long before then!

The alcohol, delicately infused with vanilla, can then be used to flavor pancake batter, a cake, a brioche, or any other gourmet dish.

Once you’ve used your pod, don’t throw it away. Let it dry naturally, then slip it whole into a box of sugar to create subtly scented sugar. For a more intense flavor, grind the dried pod into a fine powder and mix it directly into the sugar: you’ll end up with delicious homemade vanilla sugar, particularly rich in natural aromas.
