Producers there carry out each step with care, from manual pollination to the long ripening process of the pods, in order to produce vanilla of remarkable quality, recognized by the world’s finest gourmet restaurants.

USES:

These three pods are perfect for making a wide variety of homemade recipes: custards, flans, ice cream, pastries, brioches, jams, dessert sauces, cocktails, flavored rums, or even savory dishes with exotic touches.

To fully enjoy their aromas, split the pod lengthwise and scrape out the seeds with the blade of a knife. The pod can then be left to infuse in milk, cream, or any other liquid to extract all its flavors.

STORAGE:

To preserve the full quality of your pods, store them in an airtight glass jar, away from light, heat, and temperature fluctuations. This method helps maintain their suppleness and preserves their aromatic qualities over the long term.

Add a small amount of white rum or neutral food-grade alcohol to the bottom of your jar before placing the pods inside. This traditional method, widely used in Polynesia, helps keep the vanilla pods supple for a very long time. Some Polynesians use this method to preserve their finest beans for several years. Although they’ll likely be used up long before then—such is the exceptional quality of their fragrance—this tip is worth sharing.

The alcohol, which will have slowly absorbed the vanilla’s aromas, will become an excellent natural flavoring for pancake batter, cakes, brioche, or homemade desserts.

Once the pod has been used, let it dry, then place it whole in a jar of sugar to delicately flavor it. For a more intense vanilla sugar, simply grind the dried pod before mixing it with the sugar. This will give you natural vanilla sugar that’s rich in flavor and free of artificial flavors.
